We’re officially 5 days into spring! To mark the occasion I’m enjoying the first bouquet of daffodils from the garden, although they’re looking a little worse for the wear – poor things have had a rough start with this wacky weather.
An overnight dose of water + vase life perked them right up…
Today is quite glorious and I’m feeling inspired to get outside and soak it all in.
This morning I was able to finally capture a notorious visitor as of late – a Pileated Woodpecker who’s been visiting the remnants of the tree that crashed into the house last fall. Isn’t it gorgeous?
There were some exciting creations this week!
First up, this Beet “Poke” Bowl I’ve had my eye on for a while. Recipe found here.
Back when I still ate animals I never had a proper poke bowl with tuna (which I’m sure is amazing), and I was skeptical about this recipe, given my not-so-warm feelings for beets. I was very pleasantly surprised!
There’s a wasabi avocado blend somewhere in there, along with kelp flakes to give it even more of an ocean flavor profile. Delicious!
For my dessert of the week, I decided to do some baking. Here’s my attempt at a tiered Carrot Pineapple Cake with Cashew “Cream Cheese” Frosting. Cake recipe inspiration found here, and icing here – both adapted slightly, and all dairy + gluten free.
My desire to do something a bit decorative this week probably stems from the fact that I’ve been watching The Great British Baking Show like mad (Netflix it!).
There was also a Creamy Polenta Bowl with mushrooms + greens + onions + tomatoes on top. Not a looker, but oh-so delicious. Recipe off the top of my head.

Lots of other progress that doesn’t look like much more than dirt at the moment, but underground it’s quickly becoming a party!
